Logistics firm PCL Transport, which distributes chilled goods, has been fined £150,000 over the incident at a dairy in Aylesbury, Buckinghamshire, on 15 December 2015.
Reading Crown Court was told lorry drivers ignored controls set out in PCL Transport's safe system of work, principally the use of an allocated pre-use vehicle check area.
The victim was "seriously hurt", the Health and Safety Executive (HSE) said.
PCL Transport pleaded guilty to breaching reg 17 of the Workplace (Health, Safety and Welfare) Regulations, which covers the organisation of traffic routes so that pedestrians and vehicles can circulate safely. It must pay £17,650 costs.
